Pesach Brownies

When I originally got this recipe, it used oil and raisins. Many people I know are not fond of raisins in brownies, but in this case, it made the brownies more chewy and moist. I chose to replace the oil and raisins with applesauce, resulting in a yummy, healthier, easy brownie recipe for Pesach. I usually make mine in a food processor. It can also be mixed with a fork or a mixer. These brownies freeze well.

I've included both versions of the ingredients.

Original Ingredients
2 eggs
1 cup sugar
1/2 cup oil
1/2 cup cocoa
1/2 cup matzah meal or cake meal
1/4 tsp salt
1/2 cup chopped nuts
1/2 cup raisins
1/2 cup chocolate chips

Modified Ingredients
2 eggs
1 cup sugar (you can lower the sugar to 3/4 cup)
1/2 cup applesauce
1/2 cup cocoa
1/2 cup matzah meal or cake meal
1/4 tsp salt
1/2 cup chopped nuts
1/2 cup chocolate chips

Directions for either set of Ingredients
  1. Beat eggs with sugar until light and fluffy.
  2. Add oil (or applesauce).
  3. Mix in cocoa, matzah meal and salt.
  4. Fold in nuts, (raisins if using original ingredients) and chocoate chips.
  5. Bake in greased 9 inch square pan at 350 degrees F (180 degrees C) for 20-30 minutes. When I bake it, it takes 30 minutes. Test with toothpick until it comes out dry, Cool in pan.
